We’re so lucky here in Arizona to have a fantastic citrus season with lemons, key limes, grapefruit, and oranges bejeweling our fragrant trees all through the Winter and early Spring. My favorite thing to make with citrus is curd. Rich and creamy with just enough bite to keep you on your toes! While lemon is traditional, both key limes and grapefruit make fabulous curd. I love using it to top a light, marshmallow-y Pavlova, as a filling in cupcakes, layered or whipped with cream to make luscious pies, cakes, and puddings to satisfy my sweet (and sour) tooth. And, of course, I spread it on hot toast or an English Muffin for the perfect Arizona ‘Winter’ afternoon tea treat.
